Under the `Let Me Explain umbrella she has taught us about GINGER, about APPLE CIDER VINEGAR and now CARROTS.Yes, this book, short though it is, teaches us everything we need to know about carrots and their health benefits, remedies and recipes, but Pearl delivers her information in such a terrific conversational manner that she makes us want to remember all the `pearls' she drops! She opens with a head scratcher: `This seemingly regular vegetable has many secrets that will delight you. Did you know that carrots come in the colour of the rainbow? Did you know that carrots were once upon a time used exclusively as medicine? Did you know that carrots are one of the most effective natural insecticides? By Kitty Smith We have an extensive garden ourselves and grow a number of non-commercial varieties, including the purple Dragon, the massive Oxheart, and the creamy white Lunar. These never fails to freak out guests when they spy it on a salad, and some even refuse to taste them. If the extent of your carrot expertise is limited to grabbing the occasional bag at the grocery store, this book will make you look twice at this often overlooked root vegetable. Pearl Robinson takes you out of the produce section and into the world of carrots like you've never imagined.From the earliest cultivation and uses as a medicinal root, to a look at the many different colors and varieties found around the world, Pearl shows you there's a whole lot more to carrots than those little bags in the produce section. She also explains the four major categories of carrots and some of the most popular varieties within each, very helpful for the home gardener looking to expand the carrot patch. There's also some insight into the basics of cooking carrots and why age plays an important role in how they're best put to use. The recipes included all look yummy and there are links included to find more online. There's even info on how to use carrots to treat various maladies like constipation, hypertension, even acne. Really a fantastic, educational guide to the wonderful world of carrots!

The Mysterious Multi-Functional Carrot By Marta Cheng Growing up on a farm, my family had an extensive vegetable garden with an extensive, albeit not very exotic, variety of vegetables, carrots being among them. As a teenager, I was recruited by my mother to help in the garden with the planting, hoeing, watering, harvesting and preparing the vegetables. Carrots were really hardy and in the fall, we would pick what was left of the crop and we’d store them, shoved deep in a sandbox where they’d keep for most of the winter. Despite my years of working with, and eating, my fair share of carrots, never did I imagine, until I read Pearl Robinson’s book, Carrots: Let Me Explain, how multi-functional they actually were. The book offers interesting insights into how carrots were once upon a time used exclusively as a medicine, that they’re a natural insecticide or that they were used as a decoration for hats, hair and dresses of the ladies at court in England during the Elizabethan Era. And who knew that carrots can be as addictive as coffee and even give you withdrawal symptoms? I certainly didn’t – but now I do. Carrots: Let Me Explain has lots of kernels of wisdom like that. It’s amazing how we can take something for granted that’s been around forever and really know very little about it.
